Ginger Mushroom Chicken

....with quinoa!

This mushroom chicken dish actually goes well with quinoa! 
Who would've thought rightt (not me lol). A very simple yet satisfying meal.





Ingredients:
- 1 Chicken breast
- Black pepper
- Ginger (~2 tsp thinly sliced)
- Enoki mushrooms
- Shiitake mushrooms
- Soy sauce (~3 tbsp)
- Sesame oil (~2 tsp)
- A pinch of salt 
- Garlic (sliced thinly)
- 1 cup Quinoa
- A few tablespoons oil 

  1. Prepare quinoa first. To cook quinoa, for every 1 cup of quinoa, add 2 cups water. I cooked mine in the rice cooker. 
  2. Heat oil in a wok. While waiting for oil to heat up, clean chicken and cut into smaller pieces.
  3. When the oil is heated, add the garlic and fry until it is fragrant and it turns slightly brown.
  4. Add the chicken and black pepper into the wok and cook for about 5 minutes.
  5. Add shiitake mushrooms and stir occasionally for a few minutes.
  6. Add the soy sauce, sesame oil, salt and ginger. 
  7. Add enoki mushroom and stir stir stir awaaay.
  8. Stir everything together and leave to cook for a bit longer, and tadaaa donee!
And you can add as little or as many mushrooms! Same goes to the rest of the ingredients. You can add as much or as little of all actually.... Hahaha
